April 14, 2011: Queseria Chipilo Receives Warning Letter From FDA

 A warning letter was issued by the FDA on March 3, 2011, to Mr. Emilio Cuautle, President of Queseria Chipilo, Inc., Passaic, New Jersey due to Listeria monocytogenes contamination at the facility.

This notice comes after the FDA inspected the facility on three different occasions.  Specifically, it was August 9, 2010 through August 18, 2010, August 26 through September 23, 2010 and October 25 through November 8, 2010.  Notably, the facility was voluntarily closed on August 26, 2010 and a recall took place on August 27, 2010. 

L. monocytogenes was found during the August 9 through August 18 inspection after swabs were taken from the production area and tested.  After Pulsed Field Gel Electrophoresis analysis was completed, the isolate’s pattern could be correlated back to Que Sabroso Oaxaca String Cheese.  The cheese was also found to be contaminated with L. monocytogenes.

According to the FDA, multiple serious violations occurred within the company on numerous occasions.  Inspections revealed major violations of the Current Good Manufacturing Practice (CGMP) regulations.  These breaches included unsanitary plant conditions, inadequate installation of plumbing fixture and failure of employees to follow procedures in a hygienic manner.

In conclusion, the FDA directed the company to correct the violations, and how they are going about it, and respond within 15 days.

According to the FDA, onset time of serious forms of listeriosis is unknown but may range from a few days to three weeks. The onset time of gastrointestinal symptoms is unknown but is probably greater than 12 hours.

Initial symptoms may include fever, muscle aches, fatigue, and sometimes gastrointestinal symptoms, such as nausea, vomiting, or diarrhea. If the infection spreads to the nervous system, symptoms may include headache,stiff neck, confusion, loss of balance, or convulsions.
